Rising at the highest point in Cortona, the Monastery occupies a place steeped in history. Known since Roman times for its abundant waters-a large cistern called the “Bath of Bacchus” once stood here-this place has been a sanctuary for centuries. The building itself, bordered by the ancient church of St. Anthony, now closed for worship, dating back to the 14th century, has witnessed a fascinating evolution. The original structure dates back to the 1400s, and over the centuries, the Monastery has been the refuge first for the confraternity of St. Roch, dedicated to caring for the sick, then the Dominican Monks, the Servants of Mary and finally the Cistercian Monks who established a college there.
Today, the complex structure of the Monastery tells this story. An immense hall, the former refectory of the monks, marks the beginning of a timeless journey. Interconnecting corridors and staircases tell of spaces that were once sacred places. Irregular windows, each bearing witness to a different era, are now frames for breathtaking views. Gli Affreschi Restaurant - "Gli Affreschi" restaurant, home to centuries-old frescoes, some of which experts believe depict scenes from the Battle of Montaperti in 1260, is a sanctuary of taste where Chef Ricci celebrates Tuscan cuisine with flair and sophistication. The tasting menus, an ode to the region's rich terroir, are complemented by the innovative "ingredient of the month," a 2025 novelty that unveils surprising and daring creations. Chef's signature dishes, though seasonally nuanced, remain pillars of the menu: the pappa al pomodoro, chicken liver pâté with green apple, Cortona Vermouth gel, and savory cantuccio; hand-pulled pici with cacio e pepe on a Cortona saffron velouté; and the beef sirloin with potato millefeuille and herb ash, to name a few. Great care is dedicated to the vegetable element, which often takes center stage: garden vegetables are artfully presented, playing with textures and colors.
